Egg Plant

Some one who was growing Egg Plant just gave me about 10 pounds. Roasted some last night with alot still remaing. Any suggestions as to some recipies?

I've eaten eggplant parmigiana, which was pretty good. I'm sure there is a recipe via Google. If not, I think one of the may chicken parmigiana recipes would work, with a substitution. Or how 'bout a chicken and eggplant parmigiana - I'm getting hungary.

Ended up making alot of stuffed eggplant. It came out much better than I anticipated. My first time. The remainder of the eggplant got peeled, cut into chunks and was added to a large pot of pasta sauce. Used some of the eggplant pasta sauce making three pans of Baked Ziti. That came out awesome although I ate very little. My 17 year old son ate it for breakfast and dinner until it was gone ...
