Egg Plant

Some one who was growing Egg Plant just gave me about 10 pounds. Roasted some last night with alot still remaing. Any suggestions as to some recipies? :)

I've eaten eggplant parmigiana, which was pretty good. I'm sure there is a recipe via Google. If not, I think one of the may chicken parmigiana recipes would work, with a substitution. Or how 'bout a chicken and eggplant parmigiana - I'm getting hungary.

Ended up making alot of stuffed eggplant. It came out much better than I anticipated. My first time. The remainder of the eggplant got peeled, cut into chunks and was added to a large pot of pasta sauce. Used some of the eggplant pasta sauce making three pans of Baked Ziti. That came out awesome although I ate very little. My 17 year old son ate it for breakfast and dinner until it was gone ... :rolleyes:
